Beef and Asparagus
Stir-Fry
Ingredients:
- 1 pound beef sirloin or flank steak,
thinly sliced - 1 bunch asparagus, ends trimmed and cut into bite-sized pieces
- 1 red bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon sesame oil
- 1 tablespoon olive oil (for cooking)
- Salt and pepper to taste
- Optional toppings: sliced
Directions:
- In a bowl, marinate the sliced beef with soy sauce (or coconut aminos) and sesame oil. Set aside for about 15 minutes.
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the marinated beef to the skillet and stir-fry for 2-3 minutes until browned.
Remove the beef from the skillet and set it aside. - In the same skillet, add the minced garlic, sliced onion, and red bell pepper.
Stir-fry for 3-4 minutes until the vegetables are slightly tender. - Add the asparagus pieces to the skillet and continue stir-frying for another 3-4 minutes until the asparagus is crisp-tender.
- Return the cooked beef to the skillet with the vegetables and stir to combine.
- Season with salt and pepper to taste.
- Stir-fry for an additional 1-2 minutes until the beef is cooked to your desired level of doneness and the flavors are well combined.
- Remove from heat and garnish with sliced green onions and sesame seeds, if desired.
