Beef and Asparagus
Stir-Fry

Ingredients:

  • 1 pound beef sirloin or flank steak,
    thinly sliced
  • 1 bunch asparagus, ends trimmed and cut into bite-sized pieces
  • 1 red bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced

 

  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper to taste
  • Optional toppings: sliced

Directions:

  1. In a bowl, marinate the sliced beef with soy sauce (or coconut aminos) and sesame oil. Set aside for about 15 minutes.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the marinated beef to the skillet and stir-fry for 2-3 minutes until browned.
    Remove the beef from the skillet and set it aside.
  4. In the same skillet, add the minced garlic, sliced onion, and red bell pepper.
    Stir-fry for 3-4 minutes until the vegetables are slightly tender.
  5. Add the asparagus pieces to the skillet and continue stir-frying for another 3-4 minutes until the asparagus is crisp-tender.
  6. Return the cooked beef to the skillet with the vegetables and stir to combine.
  7. Season with salt and pepper to taste.
  8. Stir-fry for an additional 1-2 minutes until the beef is cooked to your desired level of doneness and the flavors are well combined.
  9. Remove from heat and garnish with sliced green onions and sesame seeds, if desired.
  10. Serve the Beef and Asparagus Stir-Fry hot and enjoy!
